Spicy Chickpea Wrap

Ingredients:

  • 1 (15 oz) can of chickpeas, drained and rinsed

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper (adjust to your desired spice level)

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 2 cups shredded romaine lettuce

  • 1 cup diced tomatoes

  • 1/2 cup diced red onion

  • 1/4 cup crumbled feta cheese

  • 4 whole wheat tortillas

    Instructions:

  • In a medium bowl, combine the drained and rinsed chickpeas, olive oil, cumin, chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Toss to coat the chickpeas evenly.

  • Heat a skillet over medium heat and add the seasoned chickpeas. Cook for 5-7 minutes, stirring occasionally, until the chickpeas are lightly browned and the spices are fragrant.
